At Domaine d'Henri, they make their Plot Selections on two plots of Chablis Premier Cru: on the lieu-dit L'Homme Mort, located north of the slope of Fourchaume, a vineyard planted in 1970, and on Fourchaume Héritage, our oldest plot, planted in 1937.
The deep root system that draws the best from the terroir, combined with the moderate yields typical of old vines, offers exceptional tension, energy, minerality, fullness, and balance in these terroirs. These Single Vineyard Selections are not produced every year, but only in vintages with aging potential.

Soil : Mostly clay, with limestone appearing in certain areas
Winemaking : Stainless Steel and 228 barrels for second, third, fourth and fifth wine.
Aging : 73% in stainless steel, 27% in 228-liter oak barrels for 15 months
Tasting Notes
Golden yellow with greenish reflections, bright and suggestive of minerality
On the nose, an elegant blend of white flowers and citrus over a distinctly mineral background — notes of flint and salinity — plus hints of brioche or freshly baked bread
Lively and light, with a remarkable balance between vibrant acidity and enveloping texture. Intense flavors of white fruit (apple, peach) with a persistent minerality and even a hint of iodine (seaweed).
