History is often written by the victors... When we leaf through recently written books on the history of Roussillon, we find no trace of the men who rejected the policy of standardizing grape varieties.

With this wine, I wanted to pay homage to the early "resistances," to those winegrowers who, starting in the 1970s, risked being excluded from the appellation. Time has proven them right: there are rarely "bad" grape varieties*, but simply a mismatch between the grape variety, the terroir, and the winemaker!

Varieties : 100% Carignan

Climate : Mediterranean

Soil : Black sycamore

Winemaking : Stainless steel tank, with slight extraction

Aging : 7 months in stainless steel tanks

Tasting Notes

This Cariñena has a deep color with ruby ​​highlights.

Notes of cherry and spices.  

The tannins are silky and slightly spicy, while retaining a pleasant freshness.
