Myth or reality? With global warming, Mother Nature seems to be depriving us of balanced wines. So, in response, we planted this Vermentino, which provides the tension we were looking for. And besides, it has to be said, it's absolutely delicious!
Cassandre reveals the aromatic expressiveness and Mediterranean freshness of Vermentino in Cabardès. A crisp and well-structured white wine that combines elegance and mineral tension, designed to harmonize with coastal cuisine and seasonal dishes.

DO : IGP Pays d'Oc
Varieties : Rolle 100% (Vermentino)
Climate : Mediterranean with oceanic influences
Soil : Clay-limestone with the presence of limestone, typical of the terraces of Cabardés
Winemaking : Fermentation in stainless steel tanks
Aging : 3 months in stainless steel tanks with its lees.
Tasting Notes
Pale yellow color with greenish reflections
A fragrant, Mediterranean nose, with white flowers, lemon peel, green apple and subtle herbaceous notes (fennel and salty notes).
On the palate, it displays a fresh attack, medium body, a slightly unctuous texture from aging on lees, and a saline and mineral finish that prolongs the sensation of freshness. Very suitable for young consumption but with good complexity in the first vintages.
